Baked Omelette with Persian Fetta and Chilli
MAKES 1 OMELETTE
INGREDIENTS
6 eggs
1⁄2 cup thickened cream
1⁄2 cup finely sliced chives
1 tsp chilli flakes or to taste
Freshly cracked black pepper
To Serve
Finely sliced chives
Extra Yarra Valley Dairy Persian Fetta
Fresh mint leaves
Red chilli flakes to your liking
Freshly cracked black pepper
METHOD
Preheat an oven to 180 degrees bake.
In a medium sized mixing bowl, combine the omelette ingredients together using a whisk.
Pour into a small cast iron pan or a small ovenproof dish.
Bake in the oven for 15 minutes or until the top of the omelette is golden and cooked and the inside is firm and not wet.
Remove from the oven and serve in the cast iron pan or remove and serve on a plate.
Top with extra chives, Persian Fetta, a drizzle of cheese oil, mint leaves, chilli flakes and black pepper.
