Cheese
All of our fresh cheeses are made in the soft farmhouse cheese tradition. They are light and full of moisture and create a delicate mouth feel. The curds are a good, creamy base for the fresh herbs we add to them to boost their flavour and usability. The food grade ash we dust on our pyramid doesn't impart any flavour, but adds a lovely, light effervescence to the surface texture.
